Soup and Stations: Cream of Tomato Soup

Soup and Stations During a Pandemic
Our soup recipe this week comes from the kitchen of Kit Simon. The concept is that you can prepare the soup for your family and then either come to Stations of the Cross at 7:00 pm or watch the video live-stream.

Cream of Tomato Soup

Ingredients:

  • 1 T oil
  • 2 onions chopped
  • 2 clove garlic chopped
  • 4 stalks celery chopped
  • 1 pkg shredded carrots
  • 4 29 oz cans tomato puree
  • 2 boxes vegetable broth
  • 2 T sugar
  • 3 t Italian seasonings
  • 2 t seasonings salt
  • 2 cans diced tomatoes
  • ½ cup Parmesan cheese
  • 2 cups milk or cream

Directions:

  1. Sauté onion garlic and celery in oil until soft
  2. Add tomato puree, veg broth and seasonings
  3. Bring to a boil and them simmer until vegetables are cooked
  4. Use an emulsion blender
  5. Add the diced tomatoes, cheese and milk
  6. Adjust seasonings to taste
  7. Heat but don’t boil
